In the Mediterranean basin, there is of course an abundance of sun. Ripening the grapes is never a problem. Anthocyanes and polyphenols give colour, aroma and body. It is more delicate to conserve acidity, freshness and balance in the wine. The winemaking process is adapted to the yield (from 15-35 hectolitres/hectare).

The plantations of roussane will have to wait a bit more. At 12000 plants per hectare, they need more time to develop their roots. For the moment, we are vinifying a grape variety called chasan that is a bit out if the ordinary. A cross between chardonnay and listan (a table grape) that results in a surprising wine.
